Extra Virgin Olive Oil Lemon Bundt Cake

Saving and using your fruit scraps.

Have you thought of saving your Meyer lemon rind after you have extracted the juice ? They make great flavouring ingredients in your cooking (particularly in baking). You don’t need to rely on lemon extract or essence, you have natural flavouring in your freezer.

We save the rind of our Meyer lemons by grating and freezing them. Just as you would freeze lemon juice in ice cubes for later use. When a cake recipe calls for lemon rind, you have them ready.

The bees in the grove has inspired us to make this Bundt cake.

Our lemon Bundt cake is light and yet have a strong aroma of lemon. Instead of Butter, we used Frantoio Extra Virgin Olive Oil. We are not saying this is health food but healthy fats is used. If you are planning an afternoon tea this long weekend with family and friends, this would be a stunning cake to make and share.
