With the second lockdown (in Victoria, Australia), this would be great for tea breaks or a snack while working at home or homeschooling.

Carrot’s often overlooked cousin, the Parsnip, is rich in vitamins and minerals, especially folic acid, which you need for a properly functioning brain and it also protects you against Dementia, Heart Disease and Osteoporosis. It is also high in potassium which is also good for your brain. Potassium has a positive influence on the general functioning of your brain and is an important weapon against stress, anxiety and depression. The fibres in the Parsnip are good for keeping your sugar level balanced, which improves your concentration.
