GF EVOO Apple Crumble Bars

INGREDIENTS
CRUST
– 160g Rolled Oats
– 120g Almond Meal
– 1/2 teaspoon Salt
– 45ml Leccino EVOO
– 50ml Maple Syrup
– 30g chopped Pecan
FILLING
– 1 – 2 teaspoon Leccino EVOO
– 350g diced Gala Apple (approx. 3 large apple, mixed the diced apples with the juice of 1/2 a lemon)
– 2 teaspoon Cinnamon
– 1/4 teaspoon Nutmeg
– 1/4 ground Ginger
– 1 tablespoon Cornflour
– 50ml Maple Syrup
METHOD
Preheat oven to 150°C fan forced. Line a 23cm square baking pan with parchment paper.
CRUST:
Step 1. In a food processor, blend the Oats until finely ground. Add in Almond Meal. Pulse to mix. Pour in the EVOO and Maple Syrup. Pulse until well blended. Add 1 – 2 tablespoons of Water if the mixture doesn’t hold together when pressed between two fingers.
Step 2. Set aside 1/2 cup of the mixture for topping and press the remaining dough into the prepared pan. Set aside.
Step 3. Add the chopped Pecan to the topping mixture. Set aside.
FILLING:
Step 1. Mix the Cinnamon, Nutmeg, Ginger and Corn Flour in a bowl.
Step 2. Heat 1 teaspoon of EVOO in large frying pan. Sauté the apple for 2-3 minutes. Pour in the Maple Syrup and add in the spice mixture. Stir until completely mixed and the apple filling thickens.
ASSEMBLY:
Step 1.
Step 2. Bake the crumble for 25-30 minutes or until golden brown.
Step 3. Cool completely before cutting. Serve with a scoop of vanilla ice cream.
