EVOO Gingernuts

INGREDIENTS

Dry Ingredients:
– 200g Plain Flour
– 85g light Brown Sugar
– 1 teaspoon Bicarbonate of Soda (5g)
– 1/4 teaspoon Sea Salt
– 1 tablespoon Ground Ginger
– 1 teaspoon Ground Cinnamon
– 80g chopped Crystallised Ginger (Optional)

Wet Ingredients:
– 90ml Leccino EVOO
– 110g Lyle Golden Syrup

METHOD

Step 1. Preheat oven to 150°C Fan forced. Line 2 baking trays with parchment paper.

Step 2. Into a bowl, mix the plain flour, bicarbonate of soda, ground ginger, cinnamon and sea salt together.

Step 3. In a stand mixer fitted with paddle attachment, whisk the EVOO brown sugar and golden syrup together.

Step 4. Fold in the flour mixture (and add in the chopped crystallised ginger if using) .

Step 5. Roll a tablespoon of mixture into balls (18 in total). Place it on the baking tray 3 cm apart and flatten with the back of the spoon.

Step 6. Bake for 15 minutes until brown. Remove and cool on tray. Enjoy.
