EVOO Gingernuts

Dry Ingredients

– 200g Plain Flour
– 85g light Brown Sugar
– 1 teaspoon Bicarbonate of Soda (5g)
– 1/4 teaspoon Sea Salt
– 1 tablespoon Ground Ginger
– 1 teaspoon Ground Cinnamon
– 80g chopped Crystallised Ginger (Optional)

Wet Ingredients

– 90ml Leccino EVOO
– 110g Lyle Golden Syrup


Step 1

Preheat oven to 150°C Fan forced. Line 2 baking trays with parchment paper.

Step 2

Into a bowl, mix the plain flour, bicarbonate of soda, ground ginger, cinnamon and sea salt together.

Step 3

In a stand mixer fitted with paddle attachment, whisk the EVOO brown sugar and golden syrup together.

Step 4

Fold in the flour mixture (and add in the chopped crystallised ginger if using).

Step 5

Roll a tablespoon of mixture into balls (18 in total). Place it on the baking tray 3 cm apart and flatten with the back of the spoon.

Step 6

Bake for 15 minutes until brown. Remove and cool on tray. Enjoy.
