EVOO Apple Crumble

Fruit Base

– 8 Apples (pink or gala) cubed/diced

– 100g Caster Sugar

– 2 teaspoon Cinnamon

– 1/2 teaspoon grated Nutmeg (optional)


– 85g Rolled Oats

– 150g All Purpose Flour

– 150g Brown Sugar

– 120ml Leccino Extra Virgin Olive Oil

– 2 teaspoons Vanilla Extract

– 70g chopped Pecans or Walnut (optional)


Step 1

Preheat oven to 150 deg C.

Step 2

Mix fruit base ingredients. Transfer the Apple mixture into a baking pan (32cm x 23 cm).

Step 3

In a mixing bowl, combine dry crumble ingredients. Make a well in the bowl and stir in the EVOO and Vanilla Extract. Rub with fingers until it forms a crumb-like mixture. Spoon over diced Apple base.

Step 4

Bake for 45-60 minutes until the diced apples are tender when pierced with a knife. Cool in pan for 10 minutes.

Step 5

Serve with whipped cream or a scoop of your favourite ice-cream.
