Dark Chocolate Chip Crackers

- Serves: 125 Crackers (approx)
– 250g Plain Flour
– 85g Brown Sugar
– 1 1/2 teaspoon Baking Powder (10g)
– 1/2 teaspoon Sea Salt (5g)
– 170g Dark Chocolate finely chopped
– 70ml Leccino EVOO
– 1 tablespoon Vanilla Extract
– 100ml Water (room temperature)
Step 1. Preheat oven to 150°C Fan forced. Cut 4 sheets of baking paper to the size of 2 baking pans.
Step 2. In a blender, blitz the plain flour, brown sugar, baking powder and sea salt together for 1 minutes.
Step 3. In a stand mixer fitted with paddle attachment, whisk together the flour mixture, EVOO, vanilla extract and water. Add in the finely chopped chocolate.
Step 4. If the dough is crumbly, add in more water. If it is soft, stir in 1 tablespoon of flour.
Step 5. Divide the dough into half. Roll each portion between 2 sheets of baking paper (into a 30cm square 2mm thick ). Peel off the top sheet and cut the rolled out dough into 2.5 cm square. Slide the cut dough onto the baking pan. Repeat the same with the other half portion.
Step 6. Bake for 15 minutes until the dough is set but not firm. Separate the cut squares. Return to the oven and bake for another 10 minutes until the crackers are cooked. Remove and let them stand until completely cooled. Enjoy.
