OUR OLIVE VARIETIES
Our highly acclaimed, single varietal oils are made from one of five distinct varieties grown and bottled on our family owned estate.
Leccino is a Tuscan olive variety. This oil has a vibrant green tint and intense fresh aroma reminiscent of banana and granny smith apple. It has flavours of soft salad leaves with sweet caramel, toffee notes.
The olive variety is originally from Spain. The oil has aromas of fig leaf, rocket, ripe tomato and passionfruit. Its flavours are robust and spicy, with a slight bitter finish.
Our Frantoio is a medium style oil with aromas of chicory herbs and green almonds. It has a good harmony of flavour, bitterness and pepperiness.
Our Coratina is a complex and flavoursome oil. It has grassy, green bananas and tomato leaves notes. The oil exhibits robust character with bitterness, pungency and pepperiness typical of the variety.
Picholine is originally from Southern France where the fruit is used for table olives as well as oil. It is vibrant green in colour with aromas of fresh herbs- fennel and chervil. Its flavours are robust and spicy, with aniseed and chilli, and a bitter finish.
