We are going bananas making a one-bowl “superfood” cookies.
Overripe bananas, may be off putting. Mushy in texture with a strong aroma. Don’t throw them out. Save them in your freezer for baking or turn them into a “super cookie” – a dark chocolate EVOO rolled oat cookie. We are not saying the cookies are health food but it has all the right superfood ingredients (healthy fats, heart healthy oats, brain food – walnuts). Surprisingly , they do not taste strongly of banana !
