Lemon Bars

INGREDIENTS
Crust
– 180g Flour
– 30g Icing Sugar
– 1 teaspoon Sea Salt
– 120ml Frantoio EVOO
Filling
– 4 x 70g Eggs
– 180g Caster Sugar
– 90ml Lemon Juice
– 90ml Thickened Cream
– Pinch of Salt
METHOD
Step 1
Heat oven to 150°C. Line a 20cm square baking pan. Mix flour, icing sugar and salt in a mixer. Add in slowly EVOO and combine until it forms a dough. Spread the dough in an even layer into a baking pan and blind bake 20 minutes until pastry is cooked (light brown).
Step 2
Meanwhile, whisk together eggs, caster sugar, lemon juice, salt and thickened cream.
Step 3
Pour mixture into the baked shell and bake for 20 minutes at 130°C until just set.
Step 4
When cool, cut into equal bars and sift icing sugar over the top of the bars.
