Lemon Bars

INGREDIENTS

Crust

– 250g Flour

– 60g Icing Sugar

– 1 teaspoon Sea Salt

– 120ml Frantoio EVOO

 

Filling 

– 4 x 70g Eggs

– 250g Caster Sugar

– 80ml Lemon Juice

METHOD

Step 1. Heat oven to 150 deg C. Line a baking pan. Mix Flour, Icing Sugar and Salt in a mixer. Add in slowly EVOO and combine until it forms a dough. Spread the dough in a even layer into a baking pan and blind bake 20 minutes until pastry is cooked (light brown).

 

Step 2. Meanwhile, whisk together Eggs, Caster Sugar, Lemon Juice .

 

Step 3. Pour mixture into the baked shell and bake for 20 minutes, at a 130 deg C until just set.

 

Step 4. When cool, cut into equal bars and sift Icing Sugar over the top of the bars.
