Lemon Bars

INGREDIENTS

Crust

180g Flour
– 30g Icing Sugar
– 1 teaspoon Sea Salt
– 120ml Frantoio EVOO

 

Filling 

4 x 70g Eggs
– 180g Caster Sugar
– 90ml Lemon Juice
– 90ml Thickened Cream
– Pinch of Salt

METHOD

Step 1. Heat oven to 150°C. Line a 20cm square baking pan. Mix flour, icing sugar and salt in a mixer. Add in slowly EVOO and combine until it forms a dough. Spread the dough in an even layer into a baking pan and blind bake 20 minutes until pastry is cooked (light brown).

 

Step 2. Meanwhile, whisk together eggs, caster sugar, lemon juice, salt and thickened cream.

 

Step 3. Pour mixture into the baked shell and bake for 20 minutes at 130°C until just set.

 

Step 4. When cool, cut into equal bars and sift icing sugar over the top of the bars.
