Easter Bunnies Banana Bread

INGREDIENTS
Wet Ingredients
– 500g overripe Bananas
– 100g Leccino EVOO
– 100ml Maple Syrup
– 15ml Vanilla Extract
Dry Ingredients (flour mixture)
– 150g Plain Flour
– 250g Almond Meal
– 5g (1 teaspoon) Baking Powder
– 1 teaspoon ground Cinnamon
METHOD
Step 1
Grease a Nordiware bunny cakelet pan (1 litre). Preheat the oven to 150°C (fan forced).
Step 2
Weigh flour, almond meal, baking powder and ground cinnamon. Set aside the flour mixture.
Step 3
Puree the ripe bananas in a food processor. Add the EVOO, maple syrup and vanilla extract.
Step 4
Pour in the flour mixture.
Step 5
Spoon the batter into the cakelet pan.
Step 6
Bake for 15-20 minutes or until when tested with a cake tester, it pulls out clean.
Step 7
Remove from the oven. Let it sit for 5 minutes and unmould.
