Step 1. Preheat the oven to 150 degrees C. Grease 3 mini bread pan (14cm x 8cm x 6cm).
Step 2. In a large mixing bowl, mashed the Bananas. Add in the EVOO, Honey, Eggs, and Vanilla Extract . Mix thoroughly.
Step 3. Sift in the Flour, Baking Soda, Cinnamon, and Salt, mix.
Step 4. Divide the batter into the prepared bread pans. Bake for 40-50 minutes until center is just set or when a tester inserted into the center comes out clean.
Step 5. Remove and let it cool before cutting… or serve with each slice with a drizzle of honey.
Bread will keep for 3-5 days (covered)… if it’s not all eaten by then!
