We learnt that when we grow a zucchini plant, the bounty can be so plentiful. One can only eat that much zucchini salad.
The solution: we slip them into our baking. They make such delicious bread and brownies.We used our Frantoio EVOO to make the Zucchini mini loaves. They are moist and slightly savoury. Spices (cinnamon and nutmeg) used evokes an autumnal feel when they are baking in the oven (and they freeze well too).
